Easy Mexican Casserole

Okay, so I was prepared to make turkey tacos when I realized I would be feeding more people than I thought.  So I somehow threw this together (must have been an inspired moment) and whoa!  So delicious, and healthy!  Here is how you can make it if you wanna try:

Easy Mexican Cassarole
1 lb lean ground turkey
1 c brown rice, cooked
1 c fresh spinach, chopped finely
2 tomatoes, diced (or 1 can)
1/2 green pepper, diced
1/2 packet taco seasoning (or make your own with spices)
1 can black beans
3/4 c frozen corn
Handful black olives, sliced (optional)
Shredded cheese (desired amount)

Cook turkey, drain, throw in diced green peppers and taco seasoning with 1/2 c water. Bring to boil, remove from heat and sit 5 minutes.
Mix beans, corn, spinach, tomato in bowl. Add turkey when finished.
Heat oven to 350 and grease a glass casserole dish (9x12?). Cover bottom with cooked rice (may want to season your rice as well). Then pour turkey/veggie mixture evenly over top.
Cook for 20 minutes, sprinkle cheese on top. Cook 5 more minutes. Sprinkle olives on top. Let stand for 5 minutes and then serve!!!
Option: Serve sprinkled with homemade whole wheat tortilla strips!

Homemade Tortilla Strips
1 ww tortilla
spray olive oil

Cut tortilla into strips. 

spray pan.

lay single layer of tortilla strips, spray strips and salt.  Broil in the oven (keep a close eye they can burn very easily).  You may want to stir them a few times while in the oven.  Done!
