Yummy Healthy Caramel Popcorn

I made this last week and it tasted good, the girls loved it!  I'm not sure the best way to store it though.  After a few hours in the fridge it had a tough texture.  After I removed it from the fridge it had a better texture and the taste seemed fine but since I wasn't sure I didn't keep it around long.

I think this could make a good gift too (if you can figure out the best way to store it).  Wrap in a little foodie bag and give away during this upcoming holiday season.

Kid tested. Mother approved (really).


Caramel Popcorn
1/2 c Organic Coconut oil
1/2 c Raw filtered Honey (I just used what honey I had on hand, I would like to try with Agave)
1/4 c Maple syrup (the real stuff)
1/4 tsp salt
1/4 tsp vanilla (I left this out since I didn't have any on hand)
5 c popped Popcorn
Mix all wet ingredients and salt in a saucepan (except the vanilla - add at the end of boiling) and bring to a boil for 1 1/2 minutes.  Pour over popcorn and mix thoroughly.  Bake at 325 for 10 minutes, stir and bake for 5 more minutes.  Let cool and store.
