Walmart | Free Better Homes and Gardens Subscription!


I found this deal through Hip2Save.com's post and I was SO excited when I found that my local Walmart carried the specially marked boxes of Baking Soda for only $.64 each (must buy 2, total cost: $1.28)!  Take a peek at your Walmart or Target (or other grocery stores) if you're interested in a free year subscription to Better Homes and Gardens (or to give as a gift this holiday season)!  I mailed out my order form with the receipt a few days ago!  And remember you can do SO many things with baking soda (natural cleaning, toothpaste, etc)!

A Nice Gift from YouVersion this Halloween!

Simple Apple Crisp

I have always loved apple crisp.  As a kid we went apple picking every year in September and I still love the smell of Macintosh apples.  Almost every year since I've been married (that would be 6 now) I have attempted apple crisp and it's always failed.  But not this year!!!  I followed this simple recipe, served with a little whipped topping or vanilla ice cream and it was a hit!  Enjoy!


Simple Apple Crisp


Ingredients:
6-7 TART Apples, cored (I left the peelings on for extra nutrition)
4 tsp Lemon Juice
1/2 tsp Vanilla (didn't have this on hand, so I skipped it)
1 c Brown Sugar (used dark brown sugar)
1/2 tsp Cinnamon (also added a little nutmeg, yum)
1 c Rolled Oats (old fashioned, not quick cooking)
1/2c Butter (room temp, even though we're cutting it in)

Instructions:
Preheat oven to 375.  Combine first three ingredients, toss.  Layer in a greased 9x12 baking dish (next time I make it I'm going to try it in the 8x8 and see how it does).
Combine brown sugar, cinnamon and oats.  Cut in butter.  (Don't know what that means, here's how to "cut in butter.")  Sprinkle this mixture over your apples and bake 40-45 minutes (or until topping is brown and apples are tender).  ENJOY!!!

Chewy Chocolate Pumpkin Cake


 I started off with the recipe here for Chocolate Chunk Pumpkin Bars, made a few tiny changes and changed the name because the texture is way more like cake than a cookie or bar.  This was a healthy bite of sweetness to cure that craving and made a good afternoon snack or served with a little ice cream after dinner.  The pumpkin just makes me so happy this time of year!



Chewy Chocolate Pumpkin Cake
2 c Whole Wheat (organic) Flour
1 Tbsp Pumpkin Pie Spice (which is just cinnamon, nutmeg and all spice)
1 tsp Baking Soda
3/4 tsp Sea Salt (which I actually forgot to add)
1 c Organic Sugar
1/4 c Unsweetened Applesauce
1/4 c Plain Greek Yogurt
1 Tbsp Canola Oil (all I had was olive oil)
2 large Egg Whites
1 tsp vanilla
1 c Pumpkin (canned, pure pumpkin not pie filling)
1/2 c Dark Chocolate (or semi-sweet) Chips

Preheat oven to 350. Spray 13x9 baking dish. Mix together flour, spice, soda and salt, set aside.  Mix together sugar, applesauce, yogurt, oil, egg whites, and vanilla.  Add pumpkin.  Mix until combined.  Add chocolate!
Pour into greased pan and bake for 25-30 minutes (toothpick in center comes out clean).  Cool and enjoy!!
Option: sprinkle with stevia while still cooling for a little added sweetness.

Yummy Healthy Caramel Popcorn

I made this last week and it tasted good, the girls loved it!  I'm not sure the best way to store it though.  After a few hours in the fridge it had a tough texture.  After I removed it from the fridge it had a better texture and the taste seemed fine but since I wasn't sure I didn't keep it around long.

I think this could make a good gift too (if you can figure out the best way to store it).  Wrap in a little foodie bag and give away during this upcoming holiday season.

Kid tested. Mother approved (really).


Caramel Popcorn
1/2 c Organic Coconut oil
1/2 c Raw filtered Honey (I just used what honey I had on hand, I would like to try with Agave)
1/4 c Maple syrup (the real stuff)
1/4 tsp salt
1/4 tsp vanilla (I left this out since I didn't have any on hand)
5 c popped Popcorn
Mix all wet ingredients and salt in a saucepan (except the vanilla - add at the end of boiling) and bring to a boil for 1 1/2 minutes.  Pour over popcorn and mix thoroughly.  Bake at 325 for 10 minutes, stir and bake for 5 more minutes.  Let cool and store.

My Workout Video Playlist


I just put together a playlist on Youtube of my favorite workouts to play through for my morning workout. 5 minute Yoga stretch warm up, 6 minute Arm workout, 15 minute Leg & Core workout (I didn't add much for abs since I'm prego right now), and 9 minute Stretch and Release cooldown.  I really enjoy working through it at my pace.  If I feel I can handle weights that day, great!  If not, I just focus on the muscles I'm using and do as much as I can.  It's like a personalized workout video!  Let me know what you think and if you have any favorite Youtube workout videos of your own.

Favorite Nighttime Snack!

We are officially 27 weeks today (UPDATE: No, we are 25 weeks...something about 4 kids has really messed with my brain), just over 6 months.  I can't believe how fast this pregnancy is going.  I am just hoping I have enough time to get everything done before baby number four.  It'll definitely help when I'm nesting and I have some drive to tackle our remaining moving boxes, furniture purchases, baby room setup, freezer food preparations and toilet paper stock up, and maybe even update baby books and snap a few new family photos.


I think I made it through this extremely munch-y week.  But wow, I felt a little crazy ('chocolate, chocolate, gimme chocolate").  One awesome drink that really hit this spot: Homemade Iced Chai!!!  Three simple ingredients:


Almond Milk (or regular milk if you'd like), Stevia (or Truvia), Sweet Coconut Thai tea (or spiced chai, or any other tea that you really enjoy).  
Steep your tea in either hot water or heated almond milk.  Dissolve 1/2 packet of stevia (too much is REALLY sweet, especially if your using heated milk).  Stir and pour over a cup full of ice.  ENJOY!
