I'm Obsessed with Beth Moore (But Not in a Stalker-Kinda-Way)



I vaguely remember my mom mentioning that she was going to a bible study at church, to watch a video for an hour, and the name Beth Moore.  This was probably 12 years ago.  That was all I knew of Mrs. Moore until about 9 years later when I went to my own BM Bible Study!
 Breaking Free was the first of four studies that I've been through.  It changed my life!  I know exactly why I love BM: she's real and she's all about the Word.  I feel incredibly challenged and encouraged by her studies, books and journals, to dig into the Word of God for myself.  I was lucky enough to catch one of her TV show recordings here in Dallas last year!  It was so cool to see her in person.  (She really is that pretty!)


So I opened up the last devotional journal that I was working on (before baby Addy was born), and read this in my last entry:
"I know things are going to be crazy for the next six months or so..."
I couldn't help but laugh out loud... that was exactly 5 months ago!  Then I noticed this perfect scripture on the opposite page,
"See to it that no one misses the grace of God." - Hebrews 12:15 (NIV)
Wow!  What perfect timing.  I probably wouldn't have even noticed that scripture five months ago.  But since then God has put this desire in me to Experience Grace, Reflect Grace, and Extend Grace.  What better way to make sure that no misses the grace of God than to be the one showing it to them!  The verse just before says,
"Make every effort to live in peace with all men and to be holy; without holiness no one will see the Lord." - Hebrews 12:14 (NIV)
But I think the real key to living a life reflecting God's grace is found earlier in the chapter,
 "We do this by keeping our eyes on Jesus, the champion who initiates and perfects our faith..." - Hebrews 12:2a (NLT)
Which goes along with one of my favorite verses:
"Seek the Kingdom of God above all else, and live righteously, and He will give you everything you need." - Matthew 6:33 (NLT) 
My paraphrase? "Go after Jesus with all you have, keep Him in your sight always. Live in peace with everyone, trying to be as much like Jesus as possible and He will put the rest in place!"
So thank you Ms. Moore for helping ignite the fire of excitement in my quiet times; the drive for adventure and delving into God's Word!  I can't wait for my next Beth Moore Bible Study!

Homemade Frozen Burritos


Before I delivered Addy, I knew that a few frozen meals would help out a lot during those first few weeks.  I splurged on all the necessities to make freezer burn a horror of the past (which it truly was with my first post-partum preparations)....and found some creative recipes to work with that we would actually enjoy eating.  This is my absolute favorite!


Mix and Match Per 8-inch Tortilla Burrito: 
generous 1/4 cup cooked rice or cooked Spanish rice
1/4 cup chopped cooked protein – cooked beef, chicken, pork, or tofu
generous 1/8 cup grilled veggies
generous 1/8 cup cooked beans (black and/or pinto beans work well)
generous 1/8 cup grated cheese
1 tablespoon cooked salsa, optional
18-inch flour tortilla
Mix and Match Per 10-inch Tortilla Burrito: 
1/3 cup cooked rice or cooked Spanish rice
1/3 cup chopped cooked protein – cooked beef, chicken, pork, or tofu
1/3 cup grilled veggies
1/3 cup cooked beans (black and/or pinto beans work well)
1/3 cup grated cheese
1/8 cooked salsa, optional
1 10-inch flour tortilla

To make individual burritos for the freezer, center a tortilla on a piece of freezer paper, wax paper, or parchment paper.
Leaving about an inch margin at the bottom, layer ingredients in a single line down the center of the tortilla as in the photo below.

Fold up the bottom of the tortilla, fold one side over, and roll up as tightly as possible. foldthe paper over the burritos, tucking in both sides, the tightly rolling the burritos in the paper as in the photos below.

Pack paper wrapped burritos in a zipper top plastic freezer bag. When ready to eat, remove burritos from the paper and put on a microwave safe plate. Unwrap and microwave on high for about 2 minutes. Carefully turn the burritos over – careful, it will be hot!  Microwave another minute. Remove from oven and enjoy. Add additional salsa and/or hot sauce as desired.

I made a few different varieties with whatever I had, a few bean & cheese, some with ground beef and lots of chicken & black bean with rice and grilled veggies.  Yum!  I think it's about time to make some more.  Check out this link to get some more tips.

Bathroom Prayer


I went through a season a while back when I was filling up my iPhone Kindle app with lots of free ebooks (mostly classics like Pride and Prejudice).  One of the books I read was a quick read titled "200 Pomegranates And An Audience of One" by Shawn Wood.  At the very back of the book is a prayer that I have taped on my bathroom mirror and read every morning while I'm brushing my teeth:
"God I pray that You would remind me that You created me for a life of meaning and influence, ultimately to bring You fame.  I pray that You would continue this work in me and hone my skills, talents, and spiritual gifts in such a way that You would be honored by my greatness.  As I walk in this jouney, God, I pray that You would show me what to do, teaching me what the passion of my life should be.  Along that journey, I pray that You would allow me to have the courage and integrity to do something meaningful with my life.  Lord teach me to see the needs of others as You see them, and to invest in your other people, Your prized possessions.  When I do this, I pray that it would be a beacon that shines on You.  God, as I do these things I pray that You would be my audience.  That my love and adoration would be for You and that You alone would get my praise.  And lastly, God, allow me the grace to finish the race well.  To hear You say, "Well done."  Lord, give me Your strength to finish strong in Jesus' Name." Amen!

Five Years Married!

Today is our 5th anniversary!  Yay!  A lot can happen in five years, like starting a business, moving three times, oh yeah, and having three children!  So this weekend I will be enjoying some time with the love of my life and happily not coming close to a computer or anything that would make me take my eyes off him!  (Sappy I know...but I don't care!)  I'm planning to be selfish these next two days, like a good, gracious woman!  So enjoy your weekend and I will have something to say come Monday.
